I almost always love to travel. I loved going to Hawaii, but coming back to my own home is also very enjoyable. I love having my own bed, closet, and bathroom nearby! The bad part about coming home is waking up to the reality that I'm not on vacation anymore! That means catching up on work stuff, laundry, cleaning, and cooking. Here's two tried and true recipes I turned to since coming home!
Meatballs
1 lb. ground beef
1 can cream of mushroom soup
Onion (some)
1/4 tsp. sage
1/2 package crushed saltines
1/4 c. rice
1 egg
Mix everything together with hands, except the soup. Form into small balls and place in greased 8x8 pan. Mix soup and 1/2-3/4 can water and pour over the meatballs. Bake about one hour at 350 degrees.
Chicken Cheese Casserole
5 slices bread, buttered & cubed
2 c. chicken, cooked & diced
3 beaten eggs
1 can cream of celery soup
1/3 c. milk
2 c. shredded cheddar cheese
Place bread in bottom of greased 9x13 pan. Top with chicken. Mix egg, soup, and milk. Pour over chicken. Top with cheese. Bake 30-35 minutes at 325 degrees.
